Cranberry Protein Oatmeal Cookies

These cookies have smart carbs, healthy fats, and some protein - what’s not to love? They take about 10 minutes to whip up and have just 7 ingredients! I’ll be enjoying these post workout for the next few days for sure.

And this week is special because you can check out the video recipe demo below as I talk through the difference between rolled and steel cut oats, where the majority of the calories are coming from in this cookie, and why I don’t recommend you make your own nut butter. :o)

COOK TIME: 20 Minutes

6 INGREDIENTS

INGREDIENTS:

  • Banana (mashed)

  • 1/4 cup Vanilla Protein Powder

  • 1 cup Oats

  • 1 cup Almond Butter

  • 1/2 tsp Cinnamon

  • 1/4 cup Dried Unsweetened Cranberries

HOW TO:

  1. Preheat oven to 350oF (177oC). Mash bananas in a bowl with a fork. Add protein powder

    and mix well.

  2. Mix in the oats, almond butter, cinnamon and dried cranberries. Roll into balls and place on a baking sheet lined with parchment paper. Press down gently with a fork to flatten. Bake for 20 minutes or until golden brown. Enjoy!

NOTES:

Don’t Have Almond Butter?

Use another nut butter instead.
