LEAN Life Recipe: Hawaiian Slow Cooker Beef
The weather is cooling down... and that means I am ready for some warmer meals!
The ease of a slow cooker meal can't be beat, but usually I'm not a huge fan because most of the recipes out there tend to be all "meat and potatoes" and don't have a lot of veggies to keep me full and satisfied longer.
A healthy recipe for me is only a healthy recipe if it keeps me from rummaging for food 30 minutes later. If I eat dinner and I'm still hungry - did I really eat dinner?
Well, the good news here is this recipe gives you PLENTY of healthy veggies, and you have the option to add even more. Extra nutrients AND extra full after the meal? Count me in! Plus, even while talking through the whole thing this only took me 8 minutes to make! My LEAN Life ladies have loved this recipe in our meal plans so I wanted to make sure to share it with all of you! I hope you enjoy it as much as I do!

Slow Cooker Hawaiian Beef
1 lb Beef Brisket
3 Red Bell Peppers, sliced
1 1/2 Cups Crushed Pineapple (canned, packed in pineapple juice)
1/2 Cup Red Onion, finely diced
2 Tablespoons Apple Cider Vinegar
2 Tablespoons Tamari (or coconut aminos)
3 Garlic cloves, minced
Sea Salt & Black Pepper (to taste)
Place beef in the slow cooker surrounded by sliced red peppers.
Drain the juice from the pineapple into a small bowl. Pour the pineapple on top
of the beef and sprinkle red onion over top.
- Mix the pineapple juice with the apple cider vinegar, tamari, garlic, sea salt and pepper. Whisk and pour over the beef and peppers.
Slow cook on high for 3-4 hours, or low for 6-8 hours.
Serve over cauliflower rice, or regular rice. Top with red peppers, shredded beef, and juices from the pan. Enjoy!
