LEAN Recipe: Seared Tuna Nicoise Salad
Thanksgiving weekend is coming to a close and I don’t know about you but I was ready for a lighter meal this evening!
One of my favorite light meals to make is a seared tuna nicotine salad. It feels special because I make dressing with fresh parsley, I add extra ingredients that I wouldn’t usually take the time to cook first (hello hard boiled eggs and blanched green beans) and I really enjoy the fresh cooked protein on top since I usually top my lunch salads with chicken cooked up on my Sunday afternoons!
Note: To be fair I often times omit the capers, anchovies, and tarragon but nobody’s the wiser.
I won’t sit here and go on about how great this salad is (but it is!)… how it will impress your husband (but it will) and how you’ll feel refreshed, healthy and ready to take on the world (or bedtime) afterwards… but all of those things 100% will happen!
