Oatmeal Protein Cookies with Cranberries

These healthy protein oatmeal cookies have smart carbs, healthy fats, and some protein—what’s not to love? They take only 10 minutes to whip up and have just 6 ingredients!

I’ll be enjoying these post-workout for the next few days for sure, and maybe try them as a sweet breakfast treat! Pro-tip: one of the best times to indulge in some great carbs is right after a workout.

And this week is special because you can check out the video recipe as I talk through the difference between rolled and steel cut oats, where the majority of the calories are coming from in this protein cookie, and why I don’t recommend you make your own nut butter. :o)

Healthy Protein Oatmeal Cookies with Cranberries

COOK TIME: 20 Minutes

Oatmeal Cookie Ingredients

  • Banana (mashed)

  • 1/4 cup Vanilla Protein Powder

  • 1 cup Oats

  • 1 cup Almond Butter

  • 1/2 tsp Cinnamon

  • 1/4 cup Dried Unsweetened Cranberries

Oatmeal Cookie Instructions

  1. Preheat oven to 350oF (177oC).

  2. Mash bananas in a bowl with a fork. Add protein powder and mix well.

  3. Mix in the oats, almond butter, cinnamon and dried cranberries.

  4. Roll into balls and place on a baking sheet lined with parchment paper. Press down gently with a fork to flatten.

  5. Bake for 20 minutes or until golden brown. Enjoy!

Don’t Have Almond Butter?

Use another nut butter instead. Peanut butter will give you a peanut butter protein oatmeal cookie!

Not into cranberries?

Feel free to leave them out, or switch them in for a different add-in. Just know, the below nutrition facts will change slightly.
