Lemon Butter Penne with Chicken and Broccoli
Penne, Chicken, and Broccoli with Lemon Butter Sauce

Another favorite for you guys! And I’m so excited to share because I am a self-proclaimed pasta lover! Who else is with me?
This recipe is especially great because it offers a lower-carb alternative by using chickpea pasta, but feel free to use regular pasta instead (the nutrition information will just be different).
The best part: it only takes 20 minutes to make. The fresh broccoli, protein-packed chicken and pasta, and lemony buttery goodness will make this recipe your go-to during a busy week.
It’s creamy, but still a healthy option for when you’re craving the comfort of pasta.

Lemon Butter Penne with Chicken and Broccoli Recipe
SERVINGS: 2
COOK TIME: 20 Minutes
Ingredients:
10 ozs Chicken Breast
1 tsp Sea Salt and Black Pepper (to taste)
1/2 Lemon (juiced)
4 oz Chickpea Pasta (uncooked)
1 tbsp Extra Virgin Olive Oil
2 tbsp Butter
3 cups Broccoli (sliced into florets)
Directions:
Fill a medium-sized pot with water and bring to a boil. Add the pasta and cook as per the directions on the package.
Dice the chicken into bite sized pieces and saute over medium heat in 1 tbsp of olive oil. Once the chicken is just cooked through (about 5-10 minutes depending on the size of your pieces) turn the heat down to low.
In the last two minutes of cooking the pasta, add the broccoli to the pasta water. Drain the pasta and broccoli, then return it to the pot.
Add the butter and lemon juice to the pan with the chicken and allow butter to melt.
Add the pasta and broccoli. Stir well to coat.
Season with sea salt and black pepper, divide between plates and enjoy!

Dairy free?
Use olive oil instead of butter.

Choose any pasta alternative. Ziti, bow tie, linguine, you name it!
Switch up the veggies.
